Arrivi ad Alberobello e il colpo d’occhio è assolutamente fantastico, il centro storico e i suoi caratteristici trulli in pietra calcarea bianca. E, se ancora non bastasse c’è il rione Aia Piccola, circa 400 tra viuzze e vicoli angusti, e poi il Rione Monti che spicca su questa già incredibile piana, per il suo incantevole panorama e per la conservazione delle caratteristiche costruttive.

Per costruire le classiche abitazioni i trullari utilizzavano le pietre edificando i trulli a secco, imbiancando poi l’interno e l’esterno con latte di calce. Molta curiosità suscitano i disegni sulla parte frontale del cono, simboli magici e propiziatori, con i significati più comuni, come la venerazione di qualche divinità per un buon raccolto, protezione della famiglia e protezione dal malocchio.

Il Pinnacolo offre piatti della tradizione pugliese creati con maestria e sapienza, fra gli esempi più significativi ci sono le orecchiette con cima di rapa, il purè di fave con la cicoriella, le “strascinate” integrali con pomodoro fresco, basilico e cacioricotta, il classico piatto “alla barese” con polpettine e braciole (involtini) in umido, tutti piatti preparati seguendo scrupolosamente le più antiche ricette tipiche di questa zona; se poi volete esagerare gustatevi le 14 portate di antipasti della tradizione, dai formaggi tipici alla melanzana ripiena.
