Sulle tracce di Pinocchio

Il 7 luglio 1881 usciva sul Giornale per i Bambini la prima delle storie che compongono Le Avventure di Pinocchio.

Chi non conosce o non ha mai letto una delle storie più belle della letteratura italiana?

Con Le avventure di Pinocchio Collodi è riuscito ad emozionare intere generazioni, e ancora oggi quel burattino indisciplinato è tra i personaggi più amati dai bambini.

Tra Castello, Peretola e Sesto Fiorentino, ci sono 12 possibili luoghi d’ispirazione delle avventure del bambino di legno.

Tappa 1_FIRENZE, Borgo Castello

La Bottega di Mastro Ciliegia_”Non so come andasse, ma il fatto gli è che un bel giorno questo pezzo di legno capitò nella bottega di un vecchio falegname, il quale aveva nome Mastr’Antonio, se non che tutti lo chiamavano maestro Ciliegia, per via della punta del suo naso, che era sempre lustra e paonazza, come una ciliegia matura.”

In passato la manutenzione delle ville del borgo richiedeva la presenza di  artigiani e falegnami, che risiedevano per lo più in Via della Petraia. Al tempo di Collodi pare che in questa via ce ne fossero addirittura due: I’Didda e I’Nappa, così chiamato per il suo gran naso sempre rosso causato dalla sua passione per il vino, probabile ispiratore del personaggio di Mastro Ciliegia.

La Quercia Grande_“In quel mentre che il povero Pinocchio impiccato dagli assassini a un ramo della Quercia grande, pareva oramai piú morto che vivo, la bella Bambina dai capelli turchini si affacciò daccapo alla finestra, e impietositasi alla vista di quell’infelice che, sospeso per il collo, ballava il trescone alle ventate di tramontana, batté per tre volte le mani insieme, e fece tre piccoli colpi.”

Fino alla seconda guerra mondiale al civico 44 di Via della Querciola si trovava una grande quercia cui Collodi immaginò Pinocchio impiccato dagli assassini.

Tappa 2_FIRENZE, Borgo Peretola

Il teatrino di Mangiafuoco_“Mentre tutto commosso diceva cosí, gli parve di sentire in lontananza una musica di pifferi e di colpi di grancassa: pí-pí-pí, pí-pí-pí, zum, zum, zum, zum. E rimase lí perplesso, bisognava prendere una risoluzione: o a scuola, o a sentire i pifferi. Quand’ecco che si trovò in mezzo a una piazza tutta piena di gente, la quale si affollava intorno a un gran baraccone di legno e di tela dipinta di mille colori.” 

Pinocchio arrivò al teatrino di Mangiafoco percorrendo la strada traversa, che si può identificare con Via del Termine che univa Peretola a Castello e che oggi è in parte scomparsa per fare posto all’aeroporto Amerigo Vespucci. Fino agli anni precedenti la seconda guerra mondiale in questa piazza si fermavano burattinai, saltimbanchi e mangiatori di fuoco.

Il Gatto e la Volpe_“Pinocchio si mise in viaggio per ritornarsene a casa sua. Ma non aveva fatto ancora mezzo chilometro, che incontrò per la strada una Volpe zoppa da un piede e un Gatto cieco da tutt’e due gli occhi che se ne andavano là là, aiutandosi fra di loro, da buoni compagni di sventura.”

Nella piazzetta alla fine di Via di Motrone, venendo da Peretola c’è l’ultimo gruppo di case dirigendosi verso Castello. Un tempo i ladri e i briganti si appostavano nei borghi ai margini dell’abitato per derubare i viandanti, proprio come la volpe e il gatto.

 

Tappa 3_Sesto Fiorentino

Il Paese dei Balocchi_“Lí non vi sono scuole: lí non vi sono maestri: lí non vi sono libri. In quel paese benedetto non si studia mai. Il giovedí non si fa scuola: e ogni settimana è composta di sei giovedí e di una domenica. Figurati che le vacanze dell’autunno cominciano col primo di gennaio e finiscono coll’ultimo di dicembre.”

In Piazza Vittorio Veneto fino ai primi anni del novecento si teneva l’annuale fiera di fine agosto. Il carro su cui salgono Lucignolo e Pinocchio ricorda una delle “corriere” trainate da cavalli o ciuchi che facevano servizio di trasporto pubblico tra Firenze e Sesto Fiorentino, passando per Castello.
Ancora oggi tra fine agosto e inizio settembre per la Fiera questa piazza e l’adiacente piazza del mercato si trasformano in un moderno paese dei balocchi.

L’Osteria del Gambero Rosso_“Cammina, cammina, cammina, alla fine sul far della sera arrivarono stanchi morti all’osteria del Gambero Rosso. — Fermiamoci un po’ qui — disse la Volpe — tanto per mangiare un boccone e per riposarci qualche ora. A mezzanotte poi ripartiremo per essere domani, all’alba, nel Campo dei miracoli.” 

Alla fine di Via delle Porcellane, fino alla seconda metà del novecento, si trovava “l’osteria Mangia e bei”, ai lati dell’ingresso erano disposti due vasi pieni di gamberi di acqua dolce, specialità della casa.

 Il Campo dei Miracoli_“Te lo spiego subito — disse la Volpe. — Bisogna sapere che nel paese dei Barbagianni c’è un campo benedetto, chiamato da tutti il Campo dei miracoli. Tu fai in questo campo una piccola buca e ci metti dentro, per esempio, uno zecchino d’oro.”

In cima alla strada c’è l’ingresso principale della Antica Manifattura Ginori, quando gli operai uscivano dalla fabbrica erano impolverati di grigio così da essere soprannominati “barbagianni”. Da qui la credenza popolare che Colonnata corrisponda al “paese dei barbagianni” di Pinocchio dove si trovava il Campo dei Miracoli, associato al giardino di Villa Gerini, infatti si racconta infatti che un giorno il contadino qui trovò un sacchetto di monete d’oro e senza pensarci due volte corse a portarle al padrone.

Altro aspetto del libro capolavoro è  il cibo, sognato, discusso e trattato molte volte. I piatti di nominati sono quelli di Pellegrino Artusi, uno dei più grandi gastronomi della tradizione toscana. Perciò ecco una delle ricette di cui si parla nell’opera.

LEPRE IN DOLCE E FORTE

“La Volpe avrebbe spelluzzicato volentieri qualche cosa anche lei: ma siccome il medico le aveva ordinato una grandissima dieta, così dové contentarsi di una semplice lepre in dolce e forte”.

Ingredienti per 4 persone:

  •     una lepre (ben frollata)
  •     pomodori freschi (o e pelati a): gr. 300
  •     olio d’oliva: gr. 100
  •     pinoli: gr. 100
  •     cedro e scorze di arancia candite: gr. 50
  •     uvetta sultanina: gr. 50
  •     cacao dolce: gr. 50
  •     sei rametti di rosmarino
  •     quattro spicchi di aglio
  •     due cipolle
  •     due carote
  •     due gambi di sedano
  •     due ciuffi di basilico
  •     una manciata di prezzemolo
  •     una foglia di lauro
  •     salvia
  •     brodo: circa mezzo litro
  •     due cavallucci
  •     un bicchiere di vino rosso
  •     sale
  •     una cucchiaiata di zucchero e aceto

Preparazione:

Pulisci e taglia a pezzi la lepre scegliendo le parti più polpose, mettile in una teglia con dei rametti di rosmarino e tre spicchi di aglio. Poni il recipiente sul fuoco e lasciare che la lepre sputi il “selvatico”, cioè emetta l’acqua contenuta; togliere i pezzi di lepre dalla teglia,  sciacqua il recipiente e ponici un trito di cipolla, carota, sedano, prezzemolo, aglio, basilico.

Unisci il tutto con l’olio, qualche foglia di lauro e la salvia,  soffriggi per qualche minuto, poi sistema nel recipiente la lepre e procedi con la salatura, fai colorire bene il tutto, dopodiché bagnali con il vino. Quando questo sarà evaporato, aggiungi i pomodori, privati dei semi, pelati e spezzettati. Infine fai cuocere bagnando ogni tanto con un mestolo di brodo bollente.

A cottura avvenuta vi deve essere parecchio intingolo,  metti in una casseruola piccola i cavallucci tagliati a fettine, i pinoli, l’uvetta, il cedro e le scorzette di arancia tritati, il cacao dolce e se occorre una cucchiaiata di zucchero; unisci con un poco di acqua e lasciali sul fuoco per circa dieci minuti, poi togli il recipiente, aggiungi due cucchiaiate o più di aceto, secondo i gusti; versa la salsa agrodolce sulla lepre, rimescola e tienila sul fuoco ancora per dieci minuti.

I buongustai consigliano di servire la lepre il giorno dopo la sua preparazione.
